I am using Lawry's hawaiian marinade for my chicken. When my fiance' grilled it on the George Foreman it didn't really turn out great. He also didn't marinade it for long. I am thinking of marinading it for 2 1/2 hrs. before baking it in the oven. Do you have any tips, recipes, or ideas for great side dishes? My fiance' is hawaiian so i really want him to love it! Thanks!

Actually, I cook my chicken in the oven! Take boneless and skinless chicken thighs and breasts and season with salt and pepper. Take your favorite teriyaki or pineapple based barbecue sauce and mix with 1 can chunked pineapple and 1 chopped green bell pepper. Pour over chicken, cover and bake for 35 minutes. Take cover off and bake an additional 15 minutes. Serve with white rice. For the rice, I substitute pineapple juice for half the required water to give it some extra flavor.

Make him some chicken adobo, it's really easy and he'll be very appreciative... in fact, i'm making some now!!

Adobo is the Philippines national dish and a favorite with many people in Hawai'i. What most people think of when they hear the word "adobo" is a stew with the basic elements of chicken and pork in a sauce of white vinegar, soy sauce, garlic, and peppercorns. The variations are endless and whether served dry or moist, whole or shredded, the subtle sourness that makes the dish unique is always present. This is Hawai'i Governor Ben Cayetano's recipe for Chicken Adobo.

INGREDIENTS:
3 pounds chicken thighs, cut into serving pieces
1/2 cup white vinegar
1/2 cup soy sauce
1/4 tsp peppercorns, crushed
1 teaspoon brown sugar
5 garlic cloves, crushed
3 bay leaves
Salt to taste
PREPARATION:
Combine all ingredients in a pan, cover, and allow to marinate one to three hours. Bring to a boil, then lower heat and simmer for 30 minutes. Uncover the pan and allow to simmer for an additional 15 minutes or until most of the liquid has evaporated and the chicken is lightly brown. Serve with white rice.
Serves: 4 to 6

Almost anything can be cooked adobo style: beef, fish, shellfish, and vegetables, in addition to pork or chicken, are excellent.

The best way I have found to make it is going back to the basics, fresh pineapple or Dole pineapple juice is a great trick to use. The acidity in the pineapple juice works as a great tenderizer for the chicken and a zesty marinade without the extra sodium in Lawry's. I use 2 large chic. breasts 1/2 can of pineapple juice 1tsp. pepper & whatever veggies you prefer place all ingredients into oven bag(incl. juice) cook in oven on 275degrees for 1-1/2 .hours. slow cook for very juicy tender chicken! hope I helped.

Personally I myself would use a pineapple and orange juice mixture for the marinade for approx. 2-3 hours then I would slow bake it at 250 deg. for 2 hours in the marinade after putting crushed pineapples and quartered oranges with almonds on it. and as for side dishes I would do a pineapple sober or maybe a banana cream pie.
