I am aware of La Costa, Aviara and Encinatas Golf Ranch. Any other quality courses?

Any bargains out there?

I work here in Carlsbad, so here are a few for you... as far as deals go though, there really aren't any in SoCal so:
1. Shadowridge CC - (Vista) It's private, so you have to buy a membership but the course is almost always in pretty good condition and the membership is pretty cheap for a CC.
2. El Camino CC - (Carlsbad) Same deal as Shadowridge, nice layout, fun course.
3. Oceanside Muni - (Oceanside) Super cheap muni, you won't spend more than 30$, but the course condition and crowds definitely reflect the fees; but as far as "deals" go, this is it.
4. Carlsbad Crossings - (Carlsbad) This one's not even open yet (opens Summer 07) but it looks very challenging and well designed, if not a little on the short side. Rumor has it fees will be 50-70$.
5. Vista Valley - (Vista) - Another private course, but if your looking to join a club this one is a great one to take a look at.
6. Arrowood GC - On the backside of Camp Pendleton, not super cheap but not too pricey at around 60$ a round. A fun track with a pretty good wind blowing out of the west at all times. A Ted Robinson designed layout.

It's kind of a drive,But a nice one. When I lived in Oceanside, I would ride out to Temecula and play Cross Creek. Great course. $29 weekdays,$39 weekends.(winter season) and it was never busy. GPS on carts. That was four years ago. There were no houses on the couse then. Give them a call.
