This question might sound pathetic at first but please read on...

I work at a restaurant where the chefs remove the cooked meat from the skewer with the same cloth again and again, as it seems very unhigyienic I suggested they use other method but the head chefs is adamant that's the only way to do it and it's not a problem. Would that be right? If not how shoud it be done?

If you are skewering large chunks of meat, then you might want to cut them off with a sharp knife. For smaller chunks, use a fork and slide them off the skewer, along with your veges etc.

gross....I would report them to the health department.

Yes, the best way is to use a fork and push the whole row of meat off the skewer from the far end.

Use a serving fork.
