Halloumi is lovely - good for BBQs or you can griddle and mix in with a chilli - good to get it just like an armadillo - crunchy on the outside, soft in the middle!

And paneer is tasty too - try cubing it and marinading with curry spices then bake in the oven as a starter for curries.

All of the low protein imitation cheeses are non-melting. They will soften with considerable heating, but due to the ingredients (mainly starch and oil), it is not possible for the cheese to melt like normal high protein cheese.

Queso Blanco
A mild tasting cheese, the most popular cheese South of the Border. Unlike American-type cheeses, it will become soft and creamy when heated, but will not melt! With this cheese you can make cheesier stuffed chicken breasts, stuffed peppers, enchiladas and burritos!

Queso Fresco (fresh cheese) and Queso Añejo (dried cheese) - Both of these are basic Mexican cheese and both are non-melting cheeses. They are sprinkled over tacos, beans, enchiladas. The fresh cheese is tangy and crumbles coarsely, in a manner similar to the Greek feta. The aged cheese is more pungent in taste and has a finer crumble.

Feta is a firm but crumbly, tangy, salty and non-melting goat cheese.

Any cheese low-fat or non-fat. That stuff just does not melt. I'm scared to know what it's made of.

I hope so, otherwise Steven Gerrard will be even thicker than he looks. He was asked in an interview what his favourite cheese was, and after deep thought, he said "....Errr......melted cheese" Lord have mercy.

I don't think Parmesan melts very well, I think it melts a bit though but never seems to when you sprinkle on pasta

Huloumi - don't know how that's spelt! Cypriot cheese we had while out there that doesn't melt when grilled. Yummy.
