ok, so im home sick today, and my appetite isn't diminished. does anyone have any good ideas for brunch/lunch? i don't eat red meat, and i dont want anything too too artery clogging, or hard to make. any ideas?

WILD SALMON SANDWICH
Serves 2

Thinly slice one large fillet of wild salmon (weighing about 200g / 7oz). Next, snip 2 or 3 rashes of streaky bacon into pieces and sizzle in a frying pan until just going crispy, then add the salmon. Whilst they're cooking, arrange some Romaine or iceberg lettuce leaves onto 2 slices of crusty rustic bread. When the salmon is browned on the outside, pile onto the bread with the bits of bacon. Drizzle with Caesar dressing and grind a little black pepper over the top and serve.

Bruschetta is one of the simplest things in the world to make, and can be very satisfying if you have good extravirgin olive oil.
BRUSCHETTA
INGREDIENTS:
Tuscan bread
garlic
Tuscan olive oil
salt and pepper

PREPARATION:
You will need 4 six-inch wide slices of Tuscan bread. Toast them, over the coals if possible (though a toaster will work fine if need be) gently rub them with a cut clove of garlic (you don’t want to overwhelm the oil), then drizzle them with good olive oil. Season with salt and pepper to taste, cut the slices in half, and serve. Serves 4.

There are lots of variations to bruschetta. Here's one of the tastiest: After rubbing the slices with the garlic, rub them with a very ripe cut tomato as well (or spread a thin layer of chopped tomatoes seasoned with basil, salt & pepper over the slices). Then sprinkle with olive oil and season

MACEDONIA (without wine because you are sick :-P )
Ingredients
about 1 lb (450 gr) of any seasonal fruit available, berries, peaches, cherries, apricots, etc.
4 tablespoons sugar
the juice of one lemon
1 banana, peeled and sliced

Wash, core, and dice the fruit.
Transfer all the fruit in a bowl of adequate size, add the sugar, and the lemon juice.
Combine very well together and place in the refrigerator for about 1 hours.
Before serving slice the banana and combine it to the rest of the fruit.
Serve in single serving bowls.
Eventually top with freshly whipped cream.

How about waffles with strawberry jam and whip cream. You can also include fresh sliced strawberries. Sure, its kind of a breakfast, but it can be a lunch too. And its not all bad for you if you include the fruit and use jam instead of maple syrup.

OMG, I am sooo starving, and I'm craving an asiago cheese bagel w/ hummus, cucumbers, tomatoes & sprouts from Einstein's Bagels. In fact, I think I'll go get one right now!

eat bread and avoid rice and non vegetarian for 2 days u would get better
