They do not present evidence to non-Jews because they do not proselytize, but to fellow Jews, they do present evidence, and they have quite a lot of things they present as evidence.
Here are just a few:
1. An argument about national revelation. The argument basically says that you can't get a nation to believe that the whole nation experienced a revelation if it never happened.
2. Fulfilled Prophecy, including the founding of Israel.
3. The fact of Jewish survival against the odds is often pointed to as evidence.
4. The Torah Codes (many Jews oppose presenting this as evidence).
5. Facts from the Torah and Talmud that supposedly no one could have known back then. An example is the length of the solar year, calculated out to quite a few decimals, which matches the recent NASA calculations.

The Discovery Seminar is presented in major Jewish cities all around the world, and tries to offer evidence. I attended one of these, and in addition to the things I've already mentioned, they present an interesting argument about the book of Esther having facts about the Holocaust in it. The " proof " that you show is certainly anything but proof. For one thing, the shroud seems to be some kind of covering for a body. Many many millions of people have died through the centuries. How can you tell which one was wrapped up in the shroud ?
Wood is wood. I've spent years in the carpenter business.If someone told me that any tiny scrap of wood was from a cross two thousand years old, he would have a lot of proving to do. The chance of it being what is claimed is one in billions.
I can't comment on that stigmata thing because I don't know what stigma you're refering to.
Not being Jewish, I won't say anything about their evidence, but I don't believe they have any more real evidence that you do.

There is no need for proof. Judaism works without miracles and such because it is simply about improving life here on earth for all of God's creatures. Christians require proof because they claim to know exactly what happens to whom in the afterlife. Jews believe that God will judge us according to our actions, not our beliefs. All of God's children will be judged fairly regardless of race, religion, ethnicity, etc. Anyone who leads a moral/ethical life will have a share in the world to come.
If you insist on proof, the entire Tanach would be our proof. It was given to us at Sinai. Biblical archealogy scholars are finding proof of many stories of the Bible, but other than that, there is nothing to prove.

No, they don't. But the Jews that I know personally and have studied with, don't claim the stories in the Old Test are Absolute Truth. They are stories with morals in them to help teach other people how to be one of "God's Chosen"... which doesn't mean one has to become a Jew to do (in the complete religious sense). They're also one of the few groups, religious wise, that don't try to convert.

The existence of creation usually, but Jews doin't tend to need to provide proof as they don't aim to convert. The religion just passes down the genearations., they feel no need to justify it to outsiders.
Stigmata isn't exactly proof. Anyone can cut their palms. And wood from the Cross, even if it is genuine, doesn't prove Jesus' divinity.
