Particularly I am interested in knowing whether I should avoid any combinations (what with what?), how does acidity affect mixing, what are the most popular non-alcoholic ingredients for alcoholic coctails... basically, as much info on the subject as possible. Thank you!

Dont mix anything alcoholic. thats all.
Any other consumable drink can be used for a mocktail.

First, I would say, know your audience. This applies to whatever kind of audience you're entertaining. Everyone will always have a preference, however when using certain ingredients like fresh limes/lemons they will always bring about the freshes results in cocktails (just as it would for food)

Also, the most important thing you need to know about mixing non-alcohol drinks is to keep things simple. Sweet will embrace tart when done in a balance way. The rules for non-alcoholic cocktails are similar as with cooking. Hope it helps.

I like to mix peach Faygo and orange juice, for a "virgin Fuzzy Naval", but that's probably not what you mean. It is really good,though. Almost as good as the real thing.

You can make any of the cocktails less the alcohol. Like virgin margaritas, daquiries, martinis........etc.
