im on a diet and eat alot of skinless/boneless chkn breat......but im no chef..lol.....i use cerole seasoning ....its all i know,....lol....help me out with some suggestions

DIET CHICKEN
Yield: 4 Servings

1 To 1 1/2 lbs chicken breasts
Boned and skinned
1/2 ts Ginger
1 ts Curry powder
1/2 ts Red pepper
2 Cloves garlic, minced
1/2 c Celery, sliced
1/2 c Red pepper strips
1/2 c Yellow pepper strips
1/2 c Dry white wine
3 tb Minced shallots
1/2 c Chicken broth

Combine ginger, curry and red pepper and rub on chicken. Saute
chicken in frying pan coated with cooking spray, then remove chicken.
Saute garlic, celery and peppers 1 minute until limp, but crisp.
Place chicken back in skillet. Combine wine and broth. Add to pan
and simmer 15 minutes.

Get some pre-made ones, like chicken bbq spices, they rub on dry and get a nice toasty flavour.

Another very simple option is to get salad dressings that have oil and vinegar base with other things added(like Italian salad dressing). Then grab some Tupperware, put the chicken breasts inside, add the salad dressing, leave for a few hours of overnight. This is a very very simple marinate. Then cook them as usual. I used to do this for large batches of chicken breasts, because if you do this to a lot of them at once you can freeze them after cooking, then you just have to defrost and you have an easier meal.

Also, some great ways to diversify, is with turkey breast. It's leaner than chicken and gives a slightly different flavour. Also you can buy ground white turkey or chicken(I buy mine from a butcher), then you can spice it and use it like you would ground beef. You can also make meatballs and burgers with it, just find recipes online and switch the ground beef for ground turkey. You can also use it to make chili, just buy premade chili spice(easy), and use ground turkey and beans and whatever veggies you love in chili, it's a great meal.

Oh and you can also buy fajita seasoning and make chicken fajitas, very tasty.

I eat chicken and turkey all the time these ways, it stops me from getting bored with it.

Since you eat alot of chicken the best way is too mix whatever spices you like with a liquid such as apple juice,weak lemon juice or water and make sure you taste the mixture so you can add more spice if needed.Soak your chicken all day or better yet 24 hours, pat dry and cook your favourite way.

Garnish with A fruit salsa like Mango or Pineapple. Grill to add a smoky flavor. Liquid smoke(in very small portion) adds flavor to the dish. Use Adobo seasoning which tends toward a garlic powder flavor.

This is really good and healthy
Lemon Chicken

Ingredients:
1 pound (4 pieces) boneless, skinless chicken breasts
1/4 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon ground red pepper (more if desired)
2 egg whites
2 teaspoons water

Lemon Sauce:
1/3 cup fat-free, reduced sodium chicken broth
1/4 cup sugar
2 tablespoons grated lemon peel
1/2 cup lemon juice (juice of 3 lemons)
2 tablespoons rice vinegar
2 tablespoons light corn syrup
1 clove garlic, finely chopped
Salt and pepper to taste
2 teaspoons corn starch
2 teaspoons cold water

Heat oven to 450 degrees. Spray a baking sheet with nonstick cooking spray. Cut each chicken breast in half lengthwise. Mix flour, baking soda and red pepper in a plastic bag. Combine egg whites and water in a medium bowl and mix well.

Dip chicken, one piece at a time, into the egg white mixture. Place in plastic bag with flour and shake to lightly coat. Place on baking sheet. Repeat with remaining chicken pieces. Bake uncovered for about 20-25 minutes or until chicken is no longer pink in center.

Prepare sauce when chicken is almost done baking. Combine all sauce ingredients except water and cornstarch in a small saucepan. Heat over medium high heat until it reaches a light boil, stirring occasionally. Combine cornstarch and cold water and mix well. Gradually add cornstarch mixture to the sauce, stirring constantly to avoid clumping. Heat until sauce thickens. Additional cornstarch can be added to create a thicker sauce.

Cut each chicken breast diagonally into slices. Pour lemon sauce over chicken and serve.

Makes 4 servings

Go to your marinade aisle in the grocery store. Buy the Lawry's pre-made marinades. Good ones are carribean jerk, hawaiian, tequila lime, and the teriyaki is okay. The lemon pepper gets old after the first time.

okay, this is what you need to do. put the chicken in a glass pan and then pour fat free or light italian dressing on it, cover it with seran wrap, pop it in the microwave for about 35 minutes or until the chicken is done. it is soo delicious...

Try marinating it with some italian dressing. Poke a few holes in a few breasts and marinate it in the fridge with some italian dressing overnight. Grill it up or bake it. It's really good.
