You can use dark corn syrup or maple syrup...it will just make it a little darker.

Or you can make a simple syrup as a substitution:


Simple Syrup- Light Corn Syrup Substitute

Ingredients:
2 cups sugar
1 cup water

Instructions:

1. Combine ingredients.
2. Over medium heat, bring to full boil.
3. Boil for one minute, or until all sugar particles are dissolved.
4. Transfer mixture into airtight refrigerator container for later use if needed.

Depends upon what you're making... (what are you making?)
the light corn syrup used in fudge recipes help make for a smooth textured fudge.

From the joy of baking website,
1 cup of light corn syrup = 1 cup granulated white sugar (increase the liquid in the recipe by 1/4 cup)

I would also add 1/4 tsp of vanilla since Karo light corn syrup flavors their corn syrup with a little vanilla.

Also, as an alternative, you can use honey, if you don't mind the additional honey flavor in your recipe.

You can use simple syrup which is a mix of sugar and water or honey but honey is much sweeter so use less.

i calls it simple sugar......water and sugar in a saucepan and let the sugar melt...you can store this in the fridge for anything you want to make a little sweeter
