When you're browning the meat just stay with it and keep moving it around, breaking it up, eventually you will have the texture you want, but it will take some work.

When I'm making the meat for tacos, I usually break up the raw meat in my hands first as I add it to the pan. After washing my hands, I continue to break up the meat with a metal spatula or spoon. This method usually works for me. :)

Use a not-too-hot temp on the skillet when you cook it, and be there the whole time smashing up the pieces with the back of a spoon. You can mash the meat up once it's cooked too, but the texture is better if you cook low and squish it up as you go.

After you cook it in the pan, throw it in the food processor. Works like a charm (& looks just like Taco Bell meat when done).

I believe all you can do take your wooden spoon to it while browning slowly. I think the secret is the slow cooking of it to give you time to manipulate it. I would do it in batches so you can really smooch and chop. I may be crazy but it seems that ground sirloin is easier to break down than ground chuck...maybe it is just me.

break it up well before cooking. and while it is frying keep stiring and using your spatula to break up the lumps as you go. also after draining the meat.. place in a large container and chop the heck out of it

fine ground meat aren't for tacos, they're more for meat balls used in soups like forming quenelles in french cooking. in french cooking as taught in le cordon bleu, get ground meat, then blend them in small amounts in a blender ; pass this through a metal sieve, scraping the back of the sieve forcing the meat to a fine pulp.
