Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Only one?!?! I can't do it.
To both cook and eat, lasagna. Or pizza, or stromboli. I make my own tomato sauces and doughs, when I get the urge. Pennsylvania Dutch chicken pot pie, which is cooked in a pot, not baked. Honey-Whole Wheat Bread. Beef oven stew. Beef vegetable soup. Glazed chicken breasts. The list goes on. I just plain like to cook. . . and to eat, too!
To eat, my brother's homemade tacos. (My tortillas never get as good as his, even when I use his recipe.) Or his soft pretzels.
To cook, but not to eat, um, stuffed peppers, I guess. Or homemade garbage pizza. (With all the toppings, if you don't know what a garbage pizza is.) I can't eat any member of the capsicum genus, not raw, not cooked. Not even a little taste. I can't even pick the peppers off and eat the slice of pizza they were on.

I came up with this using leftovers.
Some diced kielbasa or any sausage, diced peppers and onions, pinto beans, and rice. I also had some steamed shrimp to add which made it twice as good. Put it all in a skillet and mix with a lot of cajun seasoning, heat until it's hot sprinkle with any cheese and diced tomatos. Eat until you're sick. My Homemade Jambolaya!!!

My favorite is quesadillas. You can personalize it any way you want. And you have the option of baking it or frying it.
I just LOVE all the gooey cheese!!!
