Pineapple Upside-Down CakeIngredients
Serving: Makes one 10 1/2-inch cake
1/2 Cup dried tart cherries
1 pineapple, (about 3 1/2 pounds), outer skin removed and uncored
1 Cup cake flour
1 1/2 Teaspoons baking powder
1 1/4 Cups granulated sugar
12 Tablespoons (1 1/2 sticks) unsalted butter, at room temperature
1/2 Cup packed dark-brown sugar
1 vanilla bean, split lengthwise, seeds scraped
2 large eggs
6 Tablespoons whole milk
1/2 Teaspoon pure almond extract
1 Cup heavy cream, well-chilled
2 Tablespoons dark rum
Directions
Heat oven to 350 degrees;. Line a baking sheet with parchment. Place cherries in a small heat-proof bowl. Bring 1 cup water to a boil in a small saucepan. Pour over dried cherries, and soak for 10 minutes. Drain well, and coarsely chop. Using a wide Japanese mandoline, slice whole pineapple as thinly as possible. Set aside. Sift together flour and baking powder. Set aside.
Heat 1/2 cup of granulated sugar in a 10 1/2-inch cast-iron skillet. Cook until deep amber, about 5 minutes. Remove the pan from the heat. Add 4 tablespoons (1/2 stick) butter, stirring vigorously with a wooden spoon. Spread caramel evenly to coat the bottom of the skillet, and sprinkle with dark-brown sugar.
Center one piece of pineapple in the skillet. Place pineapple slices in a tightly overlapping circle. Make a second ring, completely covering the bottom and continuing at least halfway up the sides. Place one remaining slice in the center of the skillet on top of the circles. (Be certain that there are no gaps as the bottom will be the top upon inversion).
In a heavy-duty mixer fitted with the paddle attachment, cream remaining butter, remaining 3/4 cup of granulated sugar, and vanilla-bean scrapings. Add eggs one at a time, mixing well after each addition. Pour in milk and almond extract. Slowly add sifted flour, scraping sides as needed. Using a rubber spatula, fold in chopped cherries. Pour batter into pineapple-lined skillet. Spread batter evenly with an offset spatula.
Place skillet on a prepared baking sheet, and transfer baking sheet to oven. Bake until golden brown and cake tester comes out clean, about 45 minutes.
Meanwhile, pour cream into the bowl of a heavy-duty mixer. Add rum. Whip on high speed until stiff peaks form, 45 to 60 seconds. Remove cake from oven, and pour excess liquid from skillet into a measuring cup. Carefully invert onto large cake plate, and pour reserved liquid over cake. Serve with rum-spiked whipped cream.

I took this recipe from about 3 different recipes I had around the house.If you can get some coconut butter, use it to replace the shortening! The coconut flavor in the butter adds to the cake and makes it quite tasty!

INGREDIENTS
1 fresh pineapple, cored and sliced
2/3 cup pineapple juice
1/2 cup pecan pieces
7 tablespoons butter
3/4 cup packed brown sugar
1 1/2 cups flour
2 1/2 teaspoons baking powder
1/3 cup shortening or coconut butter
1/4 teaspoon salt
1/2 cup sugar
1 egg
1 1/2 teaspoons vanilla
DIRECTIONS
In small sauce pan melt butter, and add brown sugar and 1 tbs pineapple juice.
Arrange pineapple and pecans in cake pan and pour butter sauce over top.
In small bowl combine flour, baking powder, and salt.
In larger bowl add shortening, beat with mixer for 30 seconds, add sugar, beat 1 min, add egg, and vanilla, untill blended.
Start adding flour mixture and 3/4c pineapple juice to the wet mixture, a little at a time, then spread into pan.
Bake at 350* for@ 40 minutes Let cool 10 minutes before turning over on plate.

Put a cup of brown sugar, and a stick of butter in the bottom of a 9x13 pan. Turn on the oven according to the instructions on a box of yellow cake mix, and put the pan in the oven until the butter and sugar are melted.
Arrange pineapple in a single layer over the melted sugar mixture, then pour the batter from a prepared yellow cake mix carefully over the pineapple.
Bake according to directions.
Remove from oven, let cool 10 minutes, then carefully invert the pan over a large rectangular platter. Remove the pan, and let cool completely.

PINEAPPLE UPSIDE DOWN CAKE
1/3 c. butter
2/3 c. sugar
1 1/2 c. flour
1/3 tsp. salt
2 eggs, separated and beaten separately
2/3 c. water or milk
3 tsp. baking powder
1 tsp. vanilla
1 can sliced pineapples
maraschino cherries
Cream butter, add sugar, beaten egg yolks and vanilla. Add dry ingredients alternately with water or milk. Lastly, add stiffly beaten egg whites.
In the pan you will bake the cake in (a large round cast iron skillet works well) melt 1/2 cup butter and 3/4 cup brown sugar.
When the butter and sugar becomes melted and syrupy, add slices of pineapple with maraschino cherries in the middle. Pour on batter.
Bake at 325°F for about 35 minutes or until the cake springs back when touched lightly near center. Remove from oven, loosen cake gently from sides of pan and turn upside down onto a serving plate.
Serve with a sauce of your choice (such as cherry sauce, rum sauce, or whipped cream.

I make mine using a yellow boxed cake mix turns out amazing
make the cake mix according to directions in a small saucepan melt 1 stick butter with a cup of brown sugar stirring frequently spray the bottom of a 9x13 cake pan with nonstick spray put the brown sugar mix in the bottom place sliced pineapples on top add 1/2 can crushed pineapples to the cake mix add the rest of the crushed pineapples and small amount of juice to cake mix bake according to cakes directions its done when a toothpick inserted in the middle comes out clean allow to cool for 3 minutes flip onto cake plate in cookie sheet allow to cool completely before serving

take a 13inx9 in cake pan and melt 2 tablespoons of butter in bottom of pan. while butter is still warm take 1 cup of brown sugar and pour evenly over the butter. next take 1 can of pineapple rings and drain well. place rings on top of sugar side to side. next place a maraschino cherry in the center of the pineapple rings. take a yellow cake mix according to recipe...pour on top of pineapple/sugar mixture and bake following directions on the box. when done let cool for 10-15 minutes but no longer or the cake will not come out. invert cake onto platter carefully.
