Beetroot salad is usually made from boiled and pickled beetroot, not raw beetroot. Raw beetroot is hard and not sweet.
You can get cooked and pickled beetroot in jars for salads, or in the salad section you will find vac-packed beetroot that has been cooked that its much nicer, look for one with a low vinegar content.
You can then slice the beetroot up and add to a normal salad, or in morocco they serve it sliced with sliced peeled oranges sprinkled with little bits of red onion.

To make your beetroot soft you need to cook it for a long time. Keeping pricking it while it's cooking to test on it's softness. You could always cheat as well and just buy pre-cooked beetroot from the supermaket.
To make the salad just slice it up length wise and add some chopped spring onions and make or buy a french dressing to pour over. It's very simple but tasty.

The beetroot needs to be boiled to soften it.
Never made a salad with it but i have bought some ready made from the deli mixed with a vinaigrette and raisins and carrot
But my favourite is one marinaded with red wine vinegar, a little sugar and chilli - mmm mmm..........in fact i am off to buy some beetroot to make some myself!

Beetroot salad is called "Vinegret". It is really good.
It needs:
5-6 medium size beets (no leaves)
About 3 carrots.
About 1 glass of sour cabbage. (european food stores have the right one. The one that is sold canned in regular stores is way too sour)
Vegetable oil.
Few spoons of canned green peas.
You have to cover beets with water and boil them till they are soft. Do the same thing with carrots. Beets and carrots should be cooked that way without having skins peeled off first. After they become soft, drain the water, peel off the skins, cut them into tiny cubes, mix with sour cabbage, add oil, and green peas, and it's ready. You don't need to add salt because the cabbage already has salt in it.
