You can do it two ways:
1st way: Fry onions and other pulses in a pan or wok of oil for a few minutes. Then add boiled rice and stir. Then after a minute or two crack an egg put it's contents in the middle of the pan/wok. Then stir it in with the rice and pulses for about 5 minutes, add a table spoon of soy saunce and that's it.
2nd Way: make an omlette with pulses like onions in a pan, then add boiled rice with it and mix it up. Then stir and add soy sauce.

The secret is NOT to use pre-cooked rice.Even cold rice can soak up the oil and go sticky, also frying the dry rice stops it absorbing to much water.
Fry the dry rice in 1 tbs cooking oil until well coated.Add twice the rices volume of salted boiling water or stock.Turn the heat down to it's lowest setting,cover with a tight lid and leave for 15 mins exactly. Tip rice into a hot wok with a little oil and stir in a beaten egg or 2 .Toss in a few frozen peas and stir gently for till peas are ready.Stir in soya sauce to taste and a very little sesame oil.Perfect every time.

Very simple egg fried rice: Boil your rice, perfect as per the packet, maybe a little undercooked, and drain and leave to go cold. Make sure the grains are still separate and not too fluffy.
Break a couple of eggs into a bowl and mix up with a pinch of salt. Get a large non stick pan or wok, heat up nice and hot, brush with a little oil and fry your egg up really fast, whizzing it round with a spoon till it scrambles fast and makes lots of bits of egg, if the bits are big just break them up with your spoon.
Now fluff in your cold rice, into the nice hot eggy pan, splash on some soy sauce and bung in some peas. Fry in the wok, turning carefully round so you don't mash up the rice.
Some always sticks, just clean this out later. You know when its done when it smells nice and starts popping and going brown.
It's very important to under cook the rice slightly so its not too fluffy and chill it down. Hot fluffy rice will make a sticky mess in your pan!

Fry some onions, throw in some peas then two to three beaten eggs and mix in wok until eggs has been cooked then throw in some pre-cooked rice that has cooled down and toss the mixture. At the end of cooking you can put in a few drops of soy sauce.

EGG FRIED RICE
1 tablespoon peanut oil
4 large eggs, lightly beaten
4 cups cold unsalted steamed white rice
3/4 teaspoon salt
1/2 cup thinly sliced scallion greens (3 to 4 scallions)
1 to 2 teaspoons Asian sesame oil
Special equipment: a well-seasoned 14-inch flat-bottomed wok
Heat wok over high heat until a drop of water vaporizes instantly upon contact. Add peanut oil, swirling to coat wok evenly, and heat until hot and just smoking. Add eggs, tilting wok and swirling eggs to form a thin even layer on cooking surface, and cook 30 seconds, then add rice and salt and stir-fry, breaking up eggs and letting rice rest several seconds between stirs, until rice is hot, 2 to 3 minutes. Add scallion greens and sesame oil (to taste) and stir-fry until combined well.
Makes 4 side-dish or light main-course servings.

fry a thin omelette and slice it up into strips - leave to cool. Boil some long grain rice, rinse and drain - leave to cool.
Fry some oil (sesame if you have it) in a large wok or pan and add the cooled boiled rice, some chopped spring onions and the egg and a dash of soy sauce if you like it slightly coloured. Fry until heated through.
Enjoy.

! cup left over rice
1 egg
1 tsp oil
1 tsp light soya sauce
1/2 tsp freshly ground pepper
Beat the egg lightly
Add oil in to the hot wok or a frying pan, swirl it around, add egg and cook the egg while you scramble it with a fork or spatula. Add the rice and continue to stir fry on high heat for 2 minutes. Add soya sauce and pepper powder. Stir fry for further 1 minute.
Serve immediately with a gravy dish.

boil your rice once cooked get a pan or wok crack open egg on pan once on pan scramble it then add whatever veg you like i prefer spring onion and diced tomato then add your rice for taste theres a lot options i prefer soy sauce oyster sauce freshly squezzed lime a bit of sugar to season .dont over do it withsauces u can keep adding sauces and taste as you go along should take about five minutes on medium heat once everthing in pan. i hope this helps u as it is a lovely thai dish
