I have discovered kids are more likely to eat food they have helped prepare/cook.
As long as the main ingredient is healthy let them add whatever they like.
My daughters really enjoy making pizza using french stick cut in half and popping there own toppings on.
Baked potatoes are another fave, i scoop out the potatoe and mash it adding cheese, then fill the skins back with the mash and cheese and bake for a further 5 mins. tastes delicious.

I hope you are not making a rod for your own back here! Ask them what they would like best and get them involved at whatever level suits ther age and ability - from shopping to cooking be a pain but worth it when they cook for you one day or for their partners/children in future. Then see if they ar still fussy.

How about you let them have mac n cheese that is shaped like sponge bob square pants with hot dogs. (cut up of course) I love to cook, and I fixed this for my kids the other day...it was just an idea I went with. They loved it. It made me realize that the kids might like to eat my home cookin and gourmet meals, but they still need to be kids.

Mount Vesuvius, made with a volcano of mashed potato, sausages cut up and stuck in as rock, baked beans with melted cheese pouring out as lava.
Mmm, hungry now...

Roast chicken, roast potatoes & whatever veggies you can get down them. I have 5 kids and this is the only meal that they will all eat without complaining.
