does anyone know how to make eggless pastries? any kind of pastries...??? :)

I don't use eggs in any of my pastries - from pies to tarts. Here are two I like:

Flakey pastry makes enough for top and bottom crusts of a 9 inch pie or several tarts, depending on the size of your tart pan.

2 cups all-purpose flour
1 teaspoon salt
2/3 cup vegetable shortening (use unsalted butter if you want very rich pastry)
Ice cold water (anywhere from 1/4 cup to 3/4 cup)

Mix the flour and salt together in a bowl. Cut the shortening into the flour and salt until it is pea sized. Add ICE COLD water a little at a time and mix lightly with your hands until it is pastry consistency. (Please note that the amount of water changes drastically, depending on the humidity. For whatever pastry recipe you use, if it is very humid, reduce the amount of water called for.)

Divide the pastry into two equal parts. Handling it as little as possible, roll out the two crusts on a lightly floured board. Put the bottom crust in the pie plate and add filling. Loosely drape the top crust over the top of the pie plate. Pinch the two crusts together with water or juice from the filling. REFRIGERATE AT LEAST ONE HOUR.

Handle pastry as little as possible. Also, it is the refrigeration before baking that does the trick. It makes the pastry flakier.



Shortcrust pastry is a buttery, crumbly and is often used as a base for tarts.

1/2 cup unsalted butter, softened
1/2 cup caster sugar
1 teaspoon grated lemon rind
1 cup flour, plus extra for dusting
3/4 cup potato flour

Cream together butter, sugar, and lemon rind in a bowl. Sift together the plain and potato flours into a mound. Make a well in the center of the mound and add the creamed mixture. Knead lightly until the dough is consistent. Wrap the dough in plastic wrap and chill for 1 hour before use.
