I expect you are aware that fish weighing equipment can be bought from a tackle shop.
If you are looking for equipment for large specimen fish on a catch and release basis then you will require the following. These items may be mandatory on some waters and include what is necessary for the safe unhooking, weighing and return of the fish.
Scales
Weighing sling
Inflatable unhooking mat
Keep-sack (not allowed on some waters and not to be confused with a keep-net)
Bottle of fish antiseptic for any damaged parts of the fish

You can pay $50 or more for a digital fish scale, which is accurate to the ounce, or you can get a cheap luggage scale for maybe $5 or less, which is accurate to a pound or so. Try tackle shops, sporting goods stores, or maybe even a place which sells suitcases. (For years I had a $3 scale, labeled a "luggage scale", but I got it at a sporting goods store.)
