I have two large bonless chicken fillets in the fridge and would like a healthy recipe for this evening, can anybody help?

Cut the chicken into strips. Put into foil parcels and add the jest and juice of 2 limes, a large handful of fresh chopped corriander and some fresh black pepper. Bake in the oven. When cooked serve with basmati rice and salad - yummy !

Chicken Fried Rice
Boil some rice in a saucepan until it is cooked. Drain it and wash it with cold water to get rid of the starch and set it aside.
Take some chopped diced onion, peppers, peas and sweetcorn and fry for about 2mins on a high heat in 1-2 tbs Sesame seed oil.
Thinly slice the chicken and add to the above.
Add in the boiled rice and stir fry for 5-10 mins adding some soy sauce.
Next clear a corner of the hot pan and break an egg into the space and use a fork to quickly stir it up. Cover the egg with the rice in the pan and cook for 2 mins.
Stir the egg through the rice and serve. Easy and delicious.

Grilled Chicken with a Salad or Veggies,

Stir fry the Chicken add some Mushrooms, Peppers ( Yellow/Orange) put some soy/chilli/ginger sauce in it, serve with steamed rice

Chicken Parmesan chicken.
Mix together:
1/2 cup fat free or low fat mayo
1/4 cup Parmesan cheese
Spread over chicken and then sprinkle with Italian seasoning bread crumbs.

Cook at 425 for about 20-25 minutes

saute with a little bit of olive oil and garlic and whatever herb you may like,(some rosemary and thyme would be good). Slice into strips. Steam some veggies and add to chicken. Serve on top of angle hair pasta (or any other type)

Slice the chicken into bitesize pieces and add it to a pan of onions, garlic, chopped tomatoes, salt, pepper, mushrooms, worcestershire sauce. Bring to the boil and serve with pasta twists

Chicken Breasts on Rice.
INGREDIENTS:
4 boneless chicken breast halves, skin removed
1 can (10 1/2 ounces) cream of mushroom soup
1 soup can half-and-half or milk
1 can (4 ounces) mushroom pieces, with liquid
3/4 cup uncooked long-grain white rice
1/4 teaspoon garlic powder
1 envelope dry onion soup mix, divided
1/2 teaspoon dried thyme
2 tablespoons grated Parmesan cheese
PREPARATION:
Wash chicken breasts and pat dry; set aside. Combine soup with half and half. Reserve 1/2 cup of mixture for later. Mix remaining soup mixture with rice, garlic powder and half of the dry onion soup mix (about 1/4 cup).




Mix well and pour into a baking dish. Place chicken breasts on rice mixture. Combine reserved soup mixture with undrained mushrooms. Pour over chicken breasts. Sprinkle with remaining dry onion soup mix, thyme, and Parmesan cheese. Cover tightly with foil and bake in a 350° oven for 1 hour. Remove foil and continue baking for 15 to 20 minutes longer, or until chicken is tender and liquid is absorbed.
Serves 4.

You could substitute the white rice for wholegrain to make the dish even healthier. Hope you enjoy if you chose to try the recipe. :0)

You can grill them with some tasty dried herbs and spices with a little homemade salsa and rice.
