layman's definition:
amplitude: the peak of the wave form
modulation: a way of encoding a signal
so amplitude modulation (am) is encoding a signal by varying the wave form peaks (think sine wave where instead of peaking at 1, it peaks at 1 once, then at 3, then at 2...)
fm is encoding by varying the frequency (how often you send out the signal)
pm is encoding by varying the phase.
