I cook my jacket in the oven for one hour. Take it out and cut the jacket lengthways. Scoop out the potato, mash it with some horseradish sauce and a little warmed skimmed milk. Then I fold in some chopped spring onions and a flaked smoked mackeral fillet. Put all this back in the jacket and grill for a few minutes until heated through and golden on top. Yummy!

start with a tea spoon of oil in pan & when hot add a pintch of cumin seeds, when they start cracling add chopped green chilies, onion, ginger and saute till pink .Add crushed peanuts, grated cottage cheese, diced capsicum to it.Add salt to taste & pepper.(can also add tabasco sauce for that tangy & spicy taste) now add chopped corriander as a garnish. Fill this in ur jacket potato and top it up with grated mozerella cheese & bake it till the cheese melts and acquires golden colour.

I always like a some butter in the spud, and then add one of the following fillings: tuna mayo, veggie chilli, beans or prawns in mayo. I like them all equally.
