Question: Isn't good to limit white rice and eat brown rice? I have also seen par boiled rice but does it have the nutritional value. Can you compare white rice, brown rice, and parboiled rice? Also I use tofu and whole wheat and grains in my diet. Which one is better? (Like for example a whole-wheat pita sandwich stuffed with greens, and chana beans), brown rice with greens and baked (or stir fried tofu in a Very light oil). Does the cooking process reduce the vitamin content? What kind of flour should be used to prepare a roti?

Ans: Parboiled and brown rice is any day better than white rice. They retain more nutrients than the white rice. Whole-wheat pita sandwich stuffed with greens and chana beans is nutritionally better. Yes, cooking process reduces mostly vitamin C and water-soluble vitamins. Whole-wheat flour is better for roti. If you do not find whole wheat flour add some bran to the flour to get fibre, vitamins, and minerals.
