$100, $1000? Probably a wire is your safest option. Takes about 3 or 4 days. However, sending a wire from a UK bank usually requires the person to go down to the bank and sign the papers and show a passport, if this is the first time they've ever sent a wire. Not quite as easy as the US (where it can be done online).
If it is $10,000 or more, you would probably want to use a foreign exchange service to get a better exchange rate. For example, right now the rate quoted in the newspaper (i.e. for >$10 million transactions) is $1.94. Your bank will probably pay $1.83 per pound. Some foreign exchange services will over $1.93 or so, which can save you big on large transactions.
http://www.ukforex.co.uk/ is a pretty good one.

Your UK bank will be able to transfer money to your cousins bank account in the US no problem. It may take a few days. Best to speak to your bank.
If this bank acciunt option is not suitable forur needs, then Western Union money transfer is well establsihed in the UK nowadays and your cousin will have the option of getting the money very local to her in the US as there are thousands of locations. If you do it by phone the money is available in minutes.

Usually, the safest way is for him to wire it from his bank to your bank. If one of you doesn't have a bank account you can use someone else's account to send or receive the money or Western Union.
