i know that most cultures include one of the above carbs as a staple, but nutritionally, are these things healthy? Would anyone suffer nutritionally if they did not eat these carbs?

the more processed the food item the less nutrients it will provide. foods are best in the natural form so rice and potato's would be much better food selections then bread or pasta. there would be no adverse effects if these carbs where not included in the diet.

I don't eat white rice, white potatoes, white bread or white pasta and I'm fine. Instead, I eat brown rice, yams, whole grain breads and whole wheat pasta. Carbs are an important part of your diet, but simple carbs like the ones you mentioned aren't very healthy to eat on an everyday, regular basis.
