I have seen some recipes but they look complicated. Couldn't I just mix some yeast with rice and water and let it sit for a few weeks? Do I really need to use cheesecloth, and exotic yeasts, and filtrations?

Yes and no.
If you just toss yeast, rice, and water together, you'll get dead yeast rotting in decomposing rice.

It's not especially complicated, you just need the correct ingredients and follow the correct steps. It doesn't have to be that exotic...you can get kits with the right ingredients in just the right proportions here:

No, it is fermented rice and it's really hard to control the fermentation. Rice and water sitting a couple of weeks will gag a maggot, in fact you will probably find some maggots in there if you don't do it right.

Mid range sake is some of the cheapest booze out there if you buy it at the right spot. Try an asian market if there is an oriental district where you live.

I think making your own sounds pretty intense.
