You don't need to add anything to the oil but letting the fish sit in a mixture of lime/lemon juice, turmeric and pepper for about 15 minutes really enhances the flavour...

Nope. Just make sure the oil is fresh (all previously opened oils can go rancid pretty quick), and while it's fine to re-use the same oil for different batches or something don't cool it off and use it again another day. Peanut oil is one of the best, because it is pretty cheap, doesn't have a strong flavor, keeps for a good while without going rancid, and has a high smokepoint.
Also make sure your oil is hot enough before adding the fish, and don't add too much at once or it will drop the temp too much and make everything greasy.

Yes, you need to soak the fish in buttermilk, then roll it is cornmeal before putting it in the hot oil. Peanut oil
is best for frying fish because it doesn't get hot and smoke as some oils can.

No, the trick is to add something to the fish before you fry it. They make all kinds of seasoning, oh and soak the fish in buttermilk first if you have a really "fishy" tasting fish.
