Yep, I do. I use it on a corn and bell pepper salad, but it would be good on other salads, I'm sure.
1/4 cup olive oil
1/4 cup chopped fresh cilantro
2 tablespoons chopped fresh mint
2 tablespoons white wine vinegar
1 tablespoon fresh lime juice
2 teaspoons (packed) golden brown sugar
1 garlic clove
Salt and pepper
Puree in a food processor or blender until smooth. Keeps for about two weeks in a jar in the fridge.

The beauty of cooking is that you can always add more of what you like and delete or reduce items you do not like.
I have this fav from Rachael Ray. If you don't want to use lime, use a favorite vinegar. Reduce the amount of cilantro and add your mint. I hope this helps!
2 limes, juiced
1/2 cup cilantro leaves, a couple of handfuls
2 teaspoons hot sauce, eyeball it
Salt and pepper
1/3 cup extra virgin olive oil, eyeball it
1 small red onion, quartered and thinly sliced
3 large beefsteak tomatoes, quartered and thinly sliced
Place the lime juice, cilantro, and hot sauce in food processor and add a little salt and pepper. Turn processor on and stream in extra-virgin olive oil. Taste dressing and adjust seasonings. Pour dressing into a bowl and add onions and tomatoes. Toss gently and coat in dressing. Let stand 5 to 10 minutes and serve.

Tabouleh is a really good salad meal
1/2 cup medium grain bulgur
1 1/4 cups water
4 cups loosely packed, roughly chopped flat-leaf parsley, about 3 bunches
1 1/2 cups peeled and diced tomatoes, about 3 to 5 Roma tomatoes,
1/4 cup green onions chopped, white and some of the green, about 2 green onions
1/4 to 1/2 cup loosely packed, roughly chopped mint leaves
For the dressing:
1/4 cup freshly squeezed lemon juice
1/4 teaspoon minced garlic
Pinch kosher salt
1 tablespoon extra-virgin olive oil
Bring water to a boil, pour in bulgur, stir, cover, and turn off heat. Let stand 20 to 25 minutes or until most of the liquid is absorbed and bulgur is fluffy and tender. Pour off any remaining liquid.
To prepare dressing, in a small non-reactive bowl, whisk together lemon juice, garlic, salt and oil. Taste and adjust seasonings.
In a large salad bowl, toss together parsley, tomatoes, green onions and mint. Add bulgur. Pour dressing over salad, toss to combine. Taste and adjust seasonings.
Morph 1: Add more diced tomatoes, diced cucumbers, and diced raw zucchini to the tabbouleh.
Morph 2: Add rinsed and drained canned chickpeas, and rinsed and drained canned lentils

tsp mint and tblsp cilantro with a clove of garlic and a pinch of cayenne. juice of a lemon and a splash of burbon. whisk in a quarter cup of light olive oil. s&p. great over smoked tomato halves.
