I don't have any butter or margarine, but I have 10 eggs.

yes this is the lady that i rent off of her recipe and she's 82 years old

1 egg 1 cup sugar 1 cup peanut butter

mix put on baking sheet by the tsp. bake at 350 until golden

cool on cookie sheet then move to wire rack

Snickerdoodles
* 1 cup shortening
* 1 1/2 cups white sugar
* 2 eggs
* 2 3/4 cups sifted all-purpose flour
* 2 teaspoons cream of tartar
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 2 tablespoons white sugar
* 2 teaspoons ground cinnamon

DIRECTIONS

1. Preheat oven to 400 degrees F (200 degrees C).
2. Mix the shortening and 1 1/2 cups of sugar together, thoroughly. Add the eggs and mix well.
3. Sift the dry ingredients together and add to the shortening/sugar/egg mixture.
4. Roll the dough into balls the size of small walnuts. Roll in a mixture of 2 T sugar and 2 tsp cinnamon.
5. Place 2 inches apart on an ungreased cookie sheet. Bake at 400 degrees for about 8 to 10 minutes or until lightly browned, but still soft.

You can substitute applesauce or oil for the butter. Equal for equal (1/4 c butter= 1/4 c applesauce)

I always use shortening instead of butter in cookies. They come out better in my opinion. Everyone I know is like "why are your cookies so good, no one makes them like you, etc" and its cause of the shortening I think. Not necessarily healthy, but tasty nonetheless.

You could use shortening. I once had a recipe for choc chip w/ shortening instead. (I used butter flavored shortening) I do not know if it would require changing equivalency of other ingredients.
