You should add water and some acid to the water. You might get some browning. Browning really does not effect the flavor of the potato, just the presentation of it. So if you really are looking for the nice, white of the potato, put them in a big container of water and put something heavy on it to make sure that the potatoes stay submerged. Alittle lemon juice or something like that will also help. But watch how much you put in there, it might change the flavor or even the texture of the potato. But it will probably turn alittle brown no matter what

A tip from the cookbook that came with my Rival crockpot: swirl some cream of tartar in that bowl of water. (Rival did not specify proportions. I use a tablespoon or so since I can obtain COT cheaply from our local restaurant supply store.) Swish your sliced potatoes around in that, then drain (don't rinse) and treat them as if you were preparing the recipe normally. I've never had raw potatoes brown after this treatment even after being held overnight in the refrigerator. This allows you to do all your prep work the night before.

Yes defiantley put them in cold water, you don't needthe vit C if you cover them with the water. By the way citric acid will prevent avocado from turning brown and banana also. Just FYI. It is tasteless and will not alter any foods. But for the potatoes you really don' need it.

Store them immersed in water. Adding a little bit of lemon juice is helpful if you don't want to cover with a towel or something to keep everybody wet just remember to mix potatoes, lemon juice, and water together.

put cold water over them, if need be then also put a wash cloth over them as well. Here in Florida I also put ice on them. But remember to run them over warm water other wise they will take longer to cook. You can do the same thing with carrots.

Set them in water,fully imersed. I like to use a pitcher or deep bowl,so that no parts of the potatoes are sticking up,above the surface.

Keep them fully submerged in water. (You may add a crushed vitamin C tablet to the water to help.) Pat the potatoes dry with a lint free kitchen towel or paper towels before adding them to the crock pot.
