I like spinach in my lasagna, in addition to all the other usual ingredients.

SPINACH LASAGNA WITH ITALIAN SAUSAGE

1 pk. Italian sausage
1 onion chopped
4 cloves garlic, minced
1/4 c. olive oil
2 (15oz) cans whole tomatoes
1 (15oz) can italian diced tomatoes
2 (8oz) cans tomato sauce
2 (4oz) cans tomato paste
1 tsp dried oregano
1 tsp dried basil
1 tsp salt (or to taste)
1/2 tsp ground black pepper (or to taste)
1 bay leaf

Cheese Filling:

1- 16 oz container ricotta cheese
1 egg
1 10-oz package frozen spinch, cooked and drained well
1/4 tsp pepper
1/2 tsp dried basil
1/4 cup Parmesan cheese
topping:
3 cups mozzarella cheese
1/4 cup Parmesan cheese
cooked lasagna noodles, enough to make 3 layers in 13 x 9 baking dish.

The sauce can be made in a Crock-pot.

In Crock-pot:

On high setting, add olive oil, onions, and garlic and let simmer until onions are clear.
Meanwhile, cook Italian sausage in separate pan on stove and cut into bite size pieces. Once onions are cooked, add tomatoes, tomato paste and sauce, oregano, basil, salt, pepper, bay leaf and cooked Italian sausage. Stir until mixed.

Cook on high in crock pot for 4-6 hrs. or until sauce is dark red rich tasting. Stir frequently during cooking.


To prepare filling:

Add ricotta cheese, cooked drained spinach, egg, basil, pepper, and Parmesan cheese in bowl and mix well.


When ready to prepare lasagna:

Add 1/4 to 1/2 cup of sauce in bottom of 13 X 9 baking dish. Cover with noodles. Cover noodles with 1/2 of the filling mixture and top with 1 cup of mozzarella cheese.
Add 1 cup sauce. Repeat one more time. Add another layer of noodles and top with 1/4 cup extra Parmasan cheese and the remaining mozzerella cheese.

Bake at 350 degrees covered with foil for 40 minutes.

Uncover and bake an additional 10-15 minutes or until cheese is lighly brown.

Delicious!

I assume you make your own sauce. As far as lasagna is concerned, it is a great casserole and subject to a few variants. Here's how I do it: Spray the pan with non-stick spray and then spoon enough sauce into the pan to cover the bottom. Place a layer of uncooked noodles in pan. (No, the lasagna will not be starchy.} Spread a layer of cheese. Use a one lb container of Ricotta, stir in a little parsley, garlic and mint, along with two egg yolks and grated Parmesan. I use a spatula and spread to edges of noodles. Add another layer of noodles. Spread sauce over this layer. Add spinach mixed with grated Parmesan and top with another layer of noodles. Add sauce and sprinkle Italian sausage over top of casserole. Sprinkle with Parmesan and bake at 350 for about 45 mins. If preferred, you can mix your sausage with the spinach. You can also delete the cheese layer. In any event, it's a good meal. Enjoy!

I suggest using and Parmesan garlic cream sauce instead of a tomato sauce. Prepare a really thick gooey garlic Alfredo sauce let it come down to room temp. Boil and cool your noodles. Cook your sausage. Completely, and I mean squeeze and drain the hell out of your spinach. Mix Mozzarella, Parmesan, and ricotta cheeses with a couple of eggs and few sprinkles of Oregano or Italian spices and salt and pepper. Start with a little sauce in the bottom of your pan. layer the following: noodle, sauce, spinach, sausage, (sprinkle chopped sun dried tomatoes,and chopped fresh basil?), ricotta cheese Blend, and a little more mozzarella to top it. Last layer put extra mozzarella then extra Parmesan and Romano cheeses and another sprinkle of Italian spices or oregano. Foil and bake @350 for 45 min. Take off foil and bake for another 10 min. until cheese on top starts to brown. Let sit for 20 or 30 min before cutting.

ITALIAN SAUSAGE LASAGNA

1 pound hot or mild Italian sausage, casings removed
2 tablespoons olive oil
1 EACH red and green peppers, thinly sliced
1 large yellow onion, thinly sliced
1 large yellow onion, chopped
4 cloves garlic, peeled
1 28-oz. can tomatoes, undrained
2 teaspoons fennel seed
Salt and pepper, to taste
1 10-oz. package chopped frozen spinach, thawed
1 tablespoon melted butter
1 cup grated Parmesan cheese, divided
3 cups low-fat ricotta cheese
1/2 (2 oz.) shredded Mozzarella cheese
9 lasagna noodles

Cooking Directions
In large heavy skillet, crumble and brown sausage until well-browned; drain off fat, set sausage aside. Wipe skillet clean; heat olive oil over medium-high heat; add sliced peppers and the sliced onion and 2 cloves of garlic. Cover and cook over medium heat, stirring occasionally, until vegetables are wilted, about 10 minutes. Add tomatoes and fennel seed. Reduce heat to low and simmer about 20-30 minutes, to develop flavors. Stir in reserved sausage. Season sauce to taste with salt and pepper; set aside.

Squeeze all liquid from thawed spinach, set aside. In small saucepan, saute the chopped onion and 2 remaining garlic cloves in the butter until wilted, about 10 minutes. Stir in spinach and 1/4 cup of the Parmesan cheese, set aside.

In a medium bowl, stir together the ricotta, mozzarella and 1/2 cup of the Parmesan cheese. Season with salt and pepper, to taste. Boil noodles according to package directions; drain.

Preheat oven to 350 degrees F. Pour one-third of tomato sauce into a greased 9x13-inch baking dish; spread evenly. Arrange 3 noodles in the dish and spread one-half of the spinach over the noodles. Spread one-half of the cheese mixture evenly over the spinach. Repeat this layering process once more. Top with the remaining 3 noodles and tomato sauce. Sprinkle top of dish with remaining 1/4 cup of Parmesan cheese.

Bake lasagna for about 1 hour, until bubbly and browned on top. Let cool for 10-15 minutes before serving.
