I've a couple links left over from a cajun jumbalaya recipe.....

you can chop it up and mix it with some scallop potatoes.

you can chop it up and mix it with dirty rice.

You can bake some veggies ... carrots, green peppers, onion, beets optional, red potatos, anything realy.... with some lemon juice, salt, pepper, olive oil... and add the sausage when the veggies are tender, and broil until nice crispy spots on green pepers.

eat it as an appetizer sliced and with a pretzle stick stuck in it.
Make a shrimp fettucini with white whine butter sauce and add some small pieces in there.

Spicy Sausage Taco Bake

Serves: 4

Ingredients:

1 lb. sausage, chopped into 1 inch pieces
1 can (10 3/4 oz.) Tomato Soup
1 cup (small jar) Chunky Salsa OR Picante Sauce
1/2 cup milk
6 (8") flour tortillas, cut into 1" pieces OR 8 (6") corn tortillas, cut into 1" pieces
1 cup shredded Cheddar cheese (4 oz.)

Directions:

COOK sausage in medium skillet over medium-high heat until sausage is browned, stirring to separate meat. Pour off fat.

ADD soup, salsa, milk, tortillas and half the cheese. Spoon into 2-qt. shallow baking dish. Cover.

BAKE at 400°F. for 30 min. or until hot. Sprinkle with remaining cheese.

Ah, well, I was going to say Jambalaya, but since that's where you got them from...

Hmm... slice them up into circles, spray some Pam in a pan, toss them until they're cooked on both sides, then either eat them with a toothpick or toss in some spaghetti sauce and make yourself a cajun pasta sauce, or serve on a roll with melted cheese.

throw them in a baking dish, chop some green peppers, onions and garlic, then sliced potatoes, salt pepper a little olive oil. cover with foil, bake about 40 minutes, take foil off, bake about 10 more minutes....yum..this works well with any type of sausage..
