Next, across from each other at restaurant. Finally, on way home, share seat next to each other. See the progression, natural like. He won't know you've planned every moment of it. Good, what he doesn't know won't scare him.
Last thing to do on the trip is to offer to do an activity (you will have grilled him over the coals to find out what he enjoys doing for fun) with him in a few days. Make sure you tell him it isn't like a date because you want him to ask for a date if he wants one, being the old fashion romantic you are. Tell him you enjoy his company and that being with him these last few days has made you see him in a different way. That will boost his ego.
But, don't come off as too eager to be romantic or intimate. That takes you off the 'intriguing' list.

Sounds like you're in a pretty good position! My advice is just go for it. He sounds like he likes you, but he's shy. So ask him to hang out with you, sit by you, etc. Take things slowly. The more he gets to know you, the more likely he'll actually ask you out.

Being straight-forward will always speed things up. Like you said, you can ask him if he wants to sit with you on the plane, and get him to be with you more one-on-one. It sounds like he's interested in you, so it wouldn't hurt to make the first move. Giving hugs and bright smiles are always friendly, so give give give them out!

Hi, I think you should talk to him. Just talk normaly, be yourself. When you think you are ready maybe you could ask him out. You will know when the time is right. Take it slow. Hope is works. Also, not in front of his friends. Hope this helps.
