regarding the canning jars:I am doing the hot water method.?

Are you using a pressure canner? If so, what are you attemping to can? I have been canning for many years, mostly green beans, and tomatoes, and cold packing hot banana peppers. We need a little more info to answer this question.

If you are talking about sterilizing the jars, that's what I do, and haven't come up with food poisoning yet. If you are talking about how you process your canned goods, ditto. But that depends on what you are canning.
