This is one of my personal favorites.
Enough for 2 servings
in a stainless steel bowl add the following ingredients.
2 Tbsp EVO (extra virgin olive oil)
2 cloves garlic finely chopped
1 cup fresh spinach leaves (washed and dryed)
1/4 cup either freshly shredded parmesan or romano cheese or feta cheese
1/4 cup sliced kalamata olives
pinch of salt and fresh ground pepper
Cook enough capalini (angel hair) pasta for 2 people when done do not rinse the pasta. Take right from the coloender still hot and place in the bowl with the other ingredients and toss. The heat of the pasta will release the oils in the garlic for flavor and also will be enough to wilt the spinach.
This is a great dish for the spring nice and light but yet very flavorful. Enjoy!!

There is alfredo sauce, white wine goes good, pesto sauce, try to find a cook book that will show you what else you can do with pasta

Grill boneless chicken breasts that have marinated in olive oil, herbs and lemon juice. Grill some mushrooms and whatever other veggies you like. Toss with any kind of pasta. I add lots of olive oil, some butter, tons of parmesan cheese and some freshly ground pepper. Delicious!

Instead of a heavy meat or marinara sauce, try topping it with some extra virgin olive oil and freshly grated parmigiano reggiano cheese. Yum :) This is especially great in the spring and summer months as it is pretty light.

I love put margarine on the hot pasta, mix it in, then add garlic salt, chopped tomatoes, basil, steamed carrots/broccoli, and maybe some parmesan cheese. It's the best!

Instead of sauce I chop fresh plum tomatoes with chopped fresh basil and fresh garlic and toss it and then when I serve each person put either or both mozzarella or parmesan cheese on top. Enjoy!

Anything, grilled vegies, seafood with a bit of good olive oil and some parmesan, left-over roast chicken with some basil and tomatoes. Heaps of combinations.

How bout adding some extra virgin-olive oil, shitake, portabello, or crimini mushrooms, gorganzola cheese? and experimenting with different spices like, crushed red pepper, oregano, tarragon, basil. I also keep some red-wine vinegar and balsamic vinegar on hand for my recipe ad-libbing.

put olive oil on it parm cheese broccoli red peppers.. mushrooms if u toilerate.. no red sauce. or stir in soy sauce veggies u like onions greens etc make ur own lo mein that way.. and.. you can add bacon crisps and red sauce to it.. then u can make it with red sauce layer it with mozz cheese layer pasta mozz etc bake it.. theres also spinach noodles good with parm cheese and oilive oil and lemon juice.. i like chicken tenders thinly sliced with bacon and olive oil, crushed garlic, parm cheese, green, onions and red peppers. theres spirals in 3 colors you cook and eat it cold - italian dressing on it cold as a salad -add chicken or tuna etc turkey or pepperoni and cubed cheese to it..
