The best material to make a brain is paper mash. Advantages are (1) You can shape it like a brain (the fissure ridges appear naturally!) (2) It can be coloured (3) You can poke needles and pins (to indicate parts)
Paper mash can be prepared by following these steps:
1. Take a huge bunch of waste paper (around 1 to 2 kg). They should be uniform in texture (dont mix wax paper and newspaper). If it is newspaper, use the same daily papers (unwaxed and unglazed papers).
2. Tear it into very small strips of 1 square cm each.
3. Boil it in hot water in a pressure cooker and have it steam for a while (2 whistles is optimum).
4. After cooling, open the cooker, drain the water carefully.
5. All that is left is paste of paper with bits still on.
6. Using gloves (if you want to avoid a sticky situation), You can shape them to any shape you want (brain, in this case)
7. Let it dry in shade for 4 to 5 hours.
8. Then once they are semi-wet, color/paint the areas (when painted wet, the colors shimmer when dried).
9. Let it dry for a day completely.
If paper mash is unavailable, thermocole is the best next option.

Depending on how great and creative it has to be, well... im not sure, but i would probably use modeling clay, the kind that hardens and pack it into a bowl line the bowl with saran wrap first so you can get it all out in the proper shape, once its out, carve all the ruts and lines in it and shape it out a lil more using pics from the internet of brains.. good luck :)

I'd think the best material would be soft clay. Sounds like a chore but interesting to say the least. Have fun and good luck!

well you can use a head cabbage or just plaster one from a mold. or take some styrofoam and roll it up into a ball, then cut it into 1/2. then after dent and cut the halves into the 2 hemispheres

you can use molding clay, and then when ur done creating the model, you can set it out to dry and it will get hard. =)

Potato - hows your carving? May need to coat it to prevent dehydration, damage & discoloration... Maybe just parafin wax would be easier...
