The fiber optic sensor is to be sed as an alarm.

Not sure, having never tried it. BUT. Its obvious that the output thru the cable will change if the gap between the led and it changes from air to water. Not sure if it will increase of decrease. Try it. Which should be submerged? Cable is probably more robust than connections on led...Unless they're protected.

Optical fiber depends on the difference in optical properties of the fiber material and air to guide the light through the fiber. If the fiber is inserted so when the tank will be filled the fiber will be covered and if the fiber is curved, instead of being fully reflected along the fiber, light will be lost through the walls, so the amount coming out the end will drop abruptly and the level from the optical detector will drop.

The optical detector "watches" the level in the tank, if it rises to a certain level it outputs a voltage that lights up the LED, and the LED feeds light into the fiber optic cable, which will carry the light to any location in that you wish to see it..
