Peach Puff Martini:
Ingredients:1.0 dash Lemon Lime Soda
1.0 each Cherry
2.0 oz Peach Schnapps
2.0 oz raspberry Vodka
Directions: Mix the DeKuyper Sour Peach Liqueur and Smirnoff Raspberry Twist vodka, as well as a dash of lemon-lime soda (such as Sprite or Sierra Mist) in a martini cocktail shaker. Strain into a cocktail glass and drop in a maraschino cherry. Use a dash of maraschino cherry syrup in recipe if desired. Serve.
Pink Bliss:
Ingredients: 1.0 each fresh squeezed Lemon
5.0 oz pink Lemonade
1.0 oz Vodka
Directions: Pour Smirnoff vodka into a highball glass filled with ice cubes. Add a large squeeze of lemon juice; this un-bitters the Vodka taste, if you want it sweeter. Fill to the top with Schweppes pink lemonade, and serve. Comes out a transperant pink colour!
Peppermint Suzi:
Ingredients: 1.0 oz Chocolate Syrup
4.0 oz espresso Coffee
0.75 oz whipped Cream
1.5 oz Creme de Menthe
2.0 oz steamed Milk
1.0 oz Irish Rye/Whiskey
Directions: Combine the Tullamore Dew, 1-oz of the creme de menthe and chocolate syrup in an Irish Coffee cup. Prepare a double espresso and steam the milk. Add espresso and steamed milk to the mix in the Irish Coffee mug. Stir well. Top with whipped cream and the last 1/2 oz of creme de menthe, and serve.

Hm. Well, I'm not quite sure why you're picking you dates drink and I hope the only reason you want to hide the alcohol is the taste BUT- Pina Colada and Strawberry daquiris and such are good tasting drinks with little alcohol

My favorites:
Sex on the Beach- very fruity, but they can be made strong so watch out!
Malibu and Orange- Orange juice with Malibu rum, which is coconut flavored.
Fuzzy Navel- Orange juice and peach schnapps. A little weaker than the other two, but they can still give a buzz

depends on what she likes...whether its fruity drinks, or drinks with cream in them, or something with a coke mixer....
going with that theme..
fruity: Rum or Vodka Punch, or Cherry Amaretto Sour or Cherry Vodka Sour. Also try a Kamikaze as a drink...tastes like lemonade
creamy: White Russian, Colorado Bulldog, Mudslide or Cherokee Rose (my own drink creation)
coke/sprite fillers... vodka/7 or amaretto and coke
