I am writing a dialogue for my french class and need to know how to say "that sounds like fun"

This sentence is everyday english, it's about having fun, not about something funny, so the translation could be :

"Ca a l'air sympa", or even more colloquial :
"Y'a moyen !"

If you are looking for something more formal :

"Ca me paraît bien"
"Ca à l'air interessant"
"Ca à l'air chouette"

The first answer is (sorry) totally wrong.

I'd stick with "ça à l'air amusant"... though you could you use the more formal version of "Ca a l'air sympa", which is "ça à l'air sympathique"... as Mr Nadas suggested.
Your French teacher is likely to believe you found it by yourself.

MrNatas even though your answers are perfectly correct, it is for a french class and those expressions are very grammermatically complex, so it would be hard to prove to your teacher that you have that high of a vocabulary level! haha, I doubt the teacher even know those.

Simplyier speaking, I would say this instead
Ç'a l'air d'être amusant.

"ça c'est amusant" or "tout ça c'est amusant"
or shortly "c'est amusant ", depending on the context.
