any secret recipes out there? ...everytime my eggs come out either a lilttle on raw side or come out like rubber? whats the perfect way to get them done well?

Eggs Benedict

INGREDIENTS:
1/2 cup butter
2 egg yolks
1 teaspoon fresh lemon juice
1/4 cup boiling water
dash salt
dash ground cayenne pepper
3 tomatoes, ends removed and halved
12 thin slices cooked ham
6 eggs
6 English muffins, split, toasted, and buttered

PREPARATION:
Eggs Benedict. In the top of a double boiler, whisk egg yolks and lemon juice together. Add 1/3 of the butter, about 3 tablespoons. Place double boiler over simmering water. Cook, beating constantly, until butter melts and sauce begins to thicken.

Add 3 more tablespoons of butter, stir until butter melts, then add remaining 2 tablespoons of butter. Slowly whisk in boiling water. Continue cooking over simmering water, stirring, until mixture thickens, about 2 to 3 minutes. Remove from heat; stir in salt and cayenne pepper.
Place ham slices and tomato halves on rack of broiler pan. Broil 4 inches from heat for about 4 minutes, or until ham begins to get browned and tomatoes are cooked through.

While ham is broiling, pour about 2 inches of water into a large skillet. Lightly salt water; bring to the boiling point. Carefully put eggs in water, breaking into a cup first, then gently slipping them into the water one at a time.

Simmer eggs, while basting with the water, for 3 to 5 minutes or until set. Remove with slotted spoon; drain.

On warm serving plates, place English muffins, 2 halves to each plate. Top halves with 2 slices of ham and a poached egg. Spoon a little sauce over the egg and place a thick slice of boiled tomato next to the egg.
Recipe for eggs benedict serves 6.

The key to cooking eggs is to not have the heat too high. High heat = rubbery eggs for sure. My favorite is over easy... best way to make sure the white is cooked to the "top" side. I like scrambled (with cheese) too but again gentle heat is the clue. You want to cook them until they are "just" done. If you get them too dry in the pan they will be overdone by the time you get them served.

Southern Style Deviled Eggs

INGREDIENTS
6 eggs
1 (4.5 ounce) can deviled ham spread
1 tablespoon sweet pickle relish
1 tablespoon mayonnaise, or as needed
salt and pepper to taste
1 pinch paprika
3 pimento-stuffed green olives, sliced (optional)
DIRECTIONS
Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and run under cold water to cool. Peel eggs, and cut into halves lengthwise.
Carefully remove the yolks from the eggs, and place them into a medium bowl, scooping out a little bit of the white along with the yolk to make a more generous cup for filling. Mash the egg yolks with deviled ham, relish and enough mayonnaise to make a smooth mixture. Season with salt and pepper to taste.
Spoon the mixture into the egg whites, or pipe with a piping bag for a more elegant look. Garnish filling with a sprinkle of paprika, and top some of them with a slice of green olive stuffed with pimento. Chill until serving.

this is a recipe that we try out once a while.You boil about 6 eggs till its hard boiled,peel the shell,smash all the 6 eggs in a bowl till it becomes like a spread.Add mayonnaise and pinch of pepper,mix again.Keep it in the fridge.When its time for a snack,just take it out,spread it on a loaf bread,add a little chili sauce and your will have a great egg sandwich.....

5 simple steps to great scrambled eggs:

1.put oil on the skillet and turn it to medium heat.
2.whisk 2 eggs, a fourth of a teaspoon of salt, and 2 table spoons of milk in a bowl.(the milk is for that extra fluff)
3.put it all on the skillet.
4.quickly start stirring with a spatula.
5.enjoy!

We are scrambled eggs people( use a little bacon grease in them if you happen to be frying up bacon at the same time). Add some cheddar or pepper cheese(cheez whiz will do ) or sometimes we throw in a can of sliced potatoes and pepper!

If you like simple scrambles eggs, try this. Put a little oil(about 1 tablespoon) in a skillet. Heat on medium heat. In a bowl, mix eggs, dash of salt and a little milk.(the milk makes them soft and creamy). Pour into skillet and stir constantly. YUM

Turn the element on to med. high once hot add butter heat butter .Once hot crack egg. fry egg for 30 seconds then break yoke continue to fry for another 30 seconds ,then flip the egg and cook for about 45 to a minute longer.and serve and enjoy .

I love scrambled. You can cook them to your liking of rawness and they're really easy to make instead of worrying about flipping an egg perfectly, lol. =]

cook them a bit longer..runny eggs can give u food poisioning
