The crust ISN'T at the same temperature. The crust is on the outside .. which means the heat disperses faster from it. All the heat is kept inside the pie (in the yummy filling) mmmm

Well the crust has had more exposure to lower temps to cool..the filling has no exposure so it cools at a much slower rate
