I need to know the recipe for honey chicken like they cook it in chinese takeaway. I have looked at recipe sites and it comes up with different honey chicken recipes. So if someone could help me that would be great.

Chinese Honey Chicken

INGREDIENTS:
One whole roasting chicken (about 3 pounds)
2 scallions (green onions)
1 small knob of ginger
Seasonings:
1 cup dark soy sauce
2 tablespoons rock sugar
1 teaspoon five-spice powder
Glaze:
2 tablespoons honey

PREPARATION:
Remove the chicken's head and feet, cut it open from the stomach, pat dry on the inside and outside with paper towels.

Cut the scallions into long sections or tie into knots. Slice the ginger or flatten it with a knife.

Mix the dark soy sauce, rock sugar and five-spice powder together well.

Reserve a few tablespoons to baste the chicken during cooking. Place the chicken in a large plastic bag with the scallions, ginger, and the remainder of the seasoning. Seal the bag and marinate in the refrigerator for 1 hour, turning the chicken twice to make sure the chicken absorbs the marinade flavor evenly. Remove from the refrigerator and discard the marinade.

Spread the legs and wings of the chicken out away from the body. To microwave, place the chicken on a heatproof microwave tray unwrapped and microwave on high heat for 10 minutes.

Remove the chicken and brush with some of the reserved marinade and microwave for 10 minutes more.

Remove again, and brush with more marinade. If it is safe to use a small amount aluminum foil in your microwave (check the owners manual) cover the wings and neck with aluminum foil, making sure the foil does not touch the sides of the oven. Cook for another 10 minutes.

Remove the chicken, brush with the honey and microwave on medium high heat for 5 to 7 minutes more.

CHINESE HONEY CHICKEN

1 lb. (approx 500 g) diced chicken
1/4 cup soy sauce
1/4 cup honey
2 tablespoons corn starch
1/4 cold water
1/4 cup pine nuts
sesame seeds
fried chinese noodles

Marinate chicken in soy sauce for a few hours.
Saute chicken in wok or fry pan until brown.

Mix cornstarch and water together. Add honey and pine nuts to chicken, then cornstarch mix.

Stir until honey thickens and coats the chicken. Mix in a sprinkle of sesame seeds.

Serve with boiled rice and steamed vegetables. Top chicken with fried Chinese noodles

BATTER
4 tablespoons cornstarch
1/4 cup flour
1 teaspoon baking powder
1/2 cup water
1/2 teaspoon salt
1 egg
1 egg white
1 1/2 lbs boneless chicken breasts, cut in thin strips
2 cups peanut oil, for deep-frying
SAUCE
1 1/2 tablespoons peanut oil
2 teaspoons chopped ginger
3 tablespoons finely sliced garlic
1 teaspoon salt
3 tablespoons sugar
1 teaspoon Chinese white rice vinegar
1/2 cup water
1 teaspoon cornstarch, mixed with
1 teaspoon water
garnish toasted sesame seeds (optional)

MIX THE BATTER INGREDIENTS together in a medium-sized bowl; it should be thick and smooth.
Allow the batter to sit, covered for at least 30 minutes.
Combine the chicken with the batter.
Heat a wok or large deep skillet until it is hot and add the oil for frying.
When the oil is barely smoking, deep-fry the chicken for 2 minutes or until the batter is just firm.
You should do this in several batches.
Remove the chicken with a slotted spoon and drain on paper towels.
TO MAKE SAUCE: Heat a small saucepan; when it is hot, add the oil, ginger and garlic, and stir for 30 seconds.
Then add the rest of the sauce ingredients and simmer for 2 minutes.
Keep warm.
Reheat the oil in the wok until it is very hot, but not smoking.
Deep-fry the chicken again until it is golden and crisp, about 1 minute.
Remove and drain, place on a warm platter, drizzle with the sauce (and sprinkle with the optional toasted sesame seeds if desired) and serve immediately.

A good organic honey mustard always tastes great with things like that. Also, if you're serving potatoes, you could spice them up a bit by serving cinnamon-honey butter to put on them.
