Where can I find Pepper Jack cheese sauce like they use in Taco Bell or a good recipe to make my own?

Extended today. I tried the first recipe wasn't what I was looking for and I haven't tried the "Taco Bell" recipe yet. Going to buy groceries tomorrow.

TACO BELLS PEPPER JACK SAUCE
1/4 red bell peppers, seeded and coarsely chopped
1 large jalapeno, chopped in half
2 tablespoons diced Spanish onions
1 cup mayonnaise
1 tablespoon vinegar
1/4 teaspoon cracked black pepper
1 dash garlic powder
1 dash cumin
Using a food processor, puree peppers and onion.
Mix 1 cup mayonnaise and 4 teaspoons of the vegetable puree in a medium bowl.
Add remaining ingredients and mix well.
Chill for several hours to let flavors develop

Here you go... Enjoy
12 min 5 min prep
3 tablespoons butter
3 tablespoons flour
1 cup milk
4 ounces shredded monterey jack pepper cheese
Melt butter in a sauce pan.
With a whisk, mix in flour and allow to cook for about 1 minute.
Slowly whisk in milk.
Cook for 1 minute.
Add cheese, keep whisking until cheese melts.
Serve with chips, veggies or whatever floats your boat.
