Crossed ankles can be a sign that she is anxious or insecure at the moment. Some girls stand like this out of habit however--don't read too much into a particular pose. Observe behavior over time. Ask open ended questions and observe:
a) the trend in answers that go with a certain pose
b) how posture changes as subjects and emotions change
Get a feel for the big picture and build a personal "body language vocabulary" directly from observation.

I never do that when I'm nervous. I do that when I really have to pee and I don't want to be rude by cutting someone off mid-sentence to go to the restroom.
