I would say that being receptive to their concerns, being
friendly, being a good listener sometimes they're just looking
for some one who will listen to what's important to them.
Being courteous and cordial. Making them feel welcome ,
and at home. The list is really long, basically using your
instinct (gut feeling). It is important to remember in these
times, everything in moderation. You don't want to over
extend, and give some whack job the wrong impression.
It's sad to say but you have to play some defense, for
your safety. I'm not saying be cynical, I'm saying be on
your toes, and assume nothing when you are dealing with
strangers. Be sweet, not stupid!

Its a bit harder as a cashier, because their is less freedom and empowerment.

But show enthusiasm to do your job, smile and greet the customer, be sincere in your thank yous.

*Make and maintain eye contact.
*Smile.
*Engage in light banter ("ooooh, your fingernails are *pretty!", "awww, look at the cute little baby", etc).
If you ask how they're doing and they reply "fine, and you?", don't just ignore it, give them an answer.
*When they're leaving, tell them to drive safe (most people expect you to say "thanks for coming in" or something generic).
