Everywhere I have researched says to gain muscle you need to eat 1 gram of protein per every 1 pound you weigh. Is this per meal or per day?

Per day and it's 1-2g of protein per pound of lean mass (not your entire weight), so you need to figure that out first.

You should have 5-7 small meals a day.
