Someone told me they were descendants of the biblical Isaac
(the name changing over time from Sons of Isaac to Issacson to Saxon). I cannot find evidence of this.

They were Germans.

Absolutely no evidence. You can take just about any people and find ways of making syllables of their name to fit the syllable of some other name. That doesn't make them related. (Does Canada come from Cain?)

In the German region of saxony, hence the name "saxons"
