If you are interested in longer-term projects, they can also connect you with other local non-profit organizations that can use your skills and talents.

Hospitals, local service agencies such as community action centers, centers for independent living, or even elementary schools. Look in the phone book under "Community Services" and see if there is a volunteer agency in your area. If so, call them, explain the project, and ask if they know where volunteers are needed.
