Chop 6-8 ripe tomatoes
6-8 green onions,
2-3 jalapeño peppers
3 garlic cloves
Put everything on a non-stick pan and start cooking (don't add oil) in medium heat till the tomatoes start realeasing its juices. Add salt, pepper and 3 tablespoonfuls of lime juice.
Coll and serve with chips.

Ingredients:
1 28-oz can peeled whole tomatoes, save the juice (fresh works well too)
1 large red onion
3 cloves fresh garlic
2 to 5 large jalapeno peppers (or serrano chilies, banana peppers, etc.)
2 mild green chilies (optional)
2 tsp finely chopped fresh cilantro (Chinese parsley, must be fresh)
2 Tbl red wine vinegar
juice of a fresh lime (critical)
1 1/2 tsp cumin
pepper to taste (1 tsp is plenty).
Directions:
Chop tomatoes coarsely
Clean and chop onions to desired coarseness
Clean and chop garlic finely; a garlic press works best
Clean and chop peppers and chilies; save the seeds
Combine everything in a large cook-pot, add spices, stir well
Heat the salsa to a boil, allow to cook for just a minute or two
Put salsa in jars.

Mango Salsa
INGREDIENTS:
1 cup diced fresh mango
1/3 cup roasted red peppers, drained & diced
1/3 cup diced red onion
1 jalapeno pepper, seeded, minced
2 tablespoons fresh mint, chopped
1 tablespoon fresh lime juice
PREPARATION:
Combine all ingredients and chill. Serve with grilled fish or chicken.
Makes 1 1/2 cups of mango salsa.

Here's mine!
4 roma tomatoes, seeded and chopped
1/2 jalapeno pepper, seeded and chopped fine
1 clove garlic, crushed and chopped fine
1 red onion (small) chopped fine
a handful of cilantro , you guessed, chopped fine
juice of one lime
salt to taste
stir and serve for a nice pico de gallo or blend slightly to the consistancy you like.
you can substitute canned tomatoes if you prefer.
