Tater Tot Casserole: Brown your meat and drain. Season with salt, pepper and garlic powder. Place meat evenly in bottom of casserole dish. Poor 2 - 3 cans of favorite cream soup over meat for the gravy (cream of mushroom, chicken or celery work well). Open a bag of favorite frozen, mixed vegetables (there are so many combinations now a days) and spread evenly over soup/gravy. Open bag of frozen tater tots and spread evenly over vegetables. Bake in 375 degree oven for about 45 minutes or until heated all the way through. Enjoy!

Brown the beef and make a sweet and sour sauce. Combine and serve over rice with a side of fresh veggies. The recipe for the sauce is as follows:
1 cup ketchup
1 cup brown sugar
2 Tbsp worcestershire sauce

HAMBURGER STUFFED FRENCH BREAD

1 loaf French bread
1 onion, chopped
3 cloves garlic, minced
1 lb ground beef, browned w/onion and garlic
1 can condensed cream of mushroom soup
salt and pepper to taste
1 1/2 cups shredded cheese (any type)
1/4 cup fresh parsley, chopped (optional)

In a skillet, sauté hamburger with minced garlic, chopped onion and (optional) parsley.
Preheat oven to 350°F.

Carve top in a circle (leaving a "cap" that you will replace on top later) out of French bread and hollow out the middle. Break up the bread innards into small pieces and set aside in a medium bowl.

To these bread crumbs, add the browned hamburger mixture, condensed cream of mushroom soup, and seasonings to taste.

Mix ingredients well and restuff this mixture back into French bread shell.

Top with cheese and replace the top (hopefully you saved it).

Wrap in aluminum foil and bake in 350°F oven 20 minutes. This will melt the cheese and help the flavors to combine. Slice and serve. Individually wrapped slices freeze well and make a quick and yummy take-to-work lunch.

The Sarge's Goetta - German Breakfast Treat
"This is of German origin, and I have never seen it anywhere except in the Greater Cincinnati Metro area. I typically make this once a year when winter is coming. To serve, slice into thin slices and fry like bacon."

3 quarts water
2 tablespoons salt
2 teaspoons ground black pepper
5 cups steel cut oats
2 pounds ground beef
2 pounds ground pork sausage
2 large onions, finely chopped
1/4 cup cooking oil
DIRECTIONS
Bring water, salt, and pepper to boil in a slow cooker set to High. Stir in steel cut oats, cover, and cook 90 minutes.
In a large bowl, mix beef, pork, and onions. Stir into the oat mixture, and reduce heat to Low. Cover, and continue cooking 3 hours, stirring occasionally.
Transfer the mixture to a medium baking pan, and cool until semi-solid. Turn out onto wax paper, and chill 1 hour in the refrigerator, or until firm.
Heat oil in a large, heavy skillet over medium high heat. Cut the refrigerated mixture into thin slices. Cook slices one at a time in the heated oil until evenly brown.

Last night I boiled ground beef with potatoes and squash. Then I added some oregano, garlic salt, pepper and some chili powder. At the end, I added a little flour, so it would make it a little gravy. It makes like a nice soup kinda thing. I made frybread to eat it with, but you could probably eat yours with any regular bread.

My mom used to brown ground beef, onions and peppers seasoned with salt and pepper. Then she added diced tomates and extra water. She tossed in uncooked macaroni and covered until pasta was cooked through and absorbed the liquid. She topped with cheese.

Another option - similar to the one above. She did basically the same thing except she used boxed mac-n-cheese. She added chili powder to the seasoning used to cook the meat, added the tomatoes and extra water using the pasta from the box and stirred in the cheese powder. Yummy too!
