This one is fairly easy to make. It tastes better if you can make it the night before.
Eclair Cake
2 (3.5 ounce) packages instant vanilla pudding mix
1 (8 ounce) container Cool Whip, thawed
3 cups milk
1 (16 ounce) package graham cracker squares
1 (16 ounce) can chocolate frosting
In a medium bowl, blend the pudding mix, Cool Whip, and milk. Arrange a single layer of graham cracker squares in the bottom of a 13x9 inch baking pan. Evenly spread half of the pudding mixture over the crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers. Spread the frosting over the whole cake up to the edges of the pan. Cover, and chill at least 4 hours before serving.

if you want the perfect dessert for kids or adults try making this
make 1 quantity of chocolate mousse (any brand) or (home made)
whip a 300ml tub of cream up
make 1 quantity of white choc mouse up.
get seperate serving glasses and layer all 3 mixtures
for decoration on the top have some choc strawberries and white choc flakes!
it is seriously the best dessert ever because it isnt a real heavy dessert and it goes perfect with coffee or a nice dessert wine!

Butterscotch Pudding
"This recipe is good as pudding or as pie filling!"
INGREDIENTS
1 cup dark brown sugar
3/8 cup cornstarch
1/2 teaspoon salt
2 eggs, beaten
2 cups milk
1 teaspoon vanilla extract
1/4 cup butter
DIRECTIONS
In a 1 quart saucepan, stir together sugar, cornstarch and salt. Place over medium-low heat and stir in eggs and milk. Cook, stirring, until mixture thickens enough to coat the back of a metal spoon. Stir in vanilla and butter. Let cool briefly and serve warm, or chill in refrigerator until serving.

Double Chocolate Brownie Cake
1 package chocolate cake mix
1 package instant chocolate pudding
4 eggs
1 cup sour cream
1/2 cup vegetable oil
1/2 cup water
2 cups chocolate chips
Grease and flour 10 inch bundt pan. In large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in eggs, sour cream, oil and water. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Stir in chocolate chips. Pour batter into pan. Bake at 350° for 50-60 minutes. Allow to cool before removing from pan.
Very chocolatey and yummy!!

DEATH BY CHOCOLATE TRIFLE:
1 (18.25 ounce) package German chocolate cake mix
1 (3.9 ounce) package instant chocolate pudding mix
1 2/3 cups milk
3/4 cup strong brewed coffee
1 (12 ounce) container frozen whipped topping, thawed
6 (1.4 ounce) bars chocolate covered toffee bars, frozen and crushed
DIRECTIONS
In a 9x13 in pan, bake cake according to package directions. Cool and crumble. Make pudding, according to package directions, with milk.
In a large trifle or other glass serving bowl, place half of the crumbled cake. Pour half of the coffee over the cake, and spread half of the pudding over that. Top with half of the whipped topping, sprinkled with half the crumbled candy bars. Repeat layers in the same order. Refrigerate until serving.
Here's an easy one for any night. It is fun, easy, and delish!
INGREDIENTS
2 bananas
1/4 cup semisweet chocolate chips
1/4 cup miniature marshmallows
DIRECTIONS
Slit each banana lengthwise through the peel, making sure not to cut all the way through to the other side. Stuff the bananas with marshmallows and chocolate chips.
Wrap each banana in aluminum foil and cook over a fire, on the barbecue, or in a 300 degree oven for 5 minutes, or until chocolate is melted. Eat with a spoon.

Millions of good dessert recipes, but when I want something tasty, simple and very little effort.....plain cottage cheese with honey drizzled on. If I have it, some sliced or chunked fresh fruit mixed in makes it outstanding.

Easy cobbler:
2-3 lbs of frozen fruit
1 cake mix
1 stick of butter
In casserole, mix fruit and 1/2 cake mix. Top with rest of cake mix. Melt butter and drizzle on top. Bake at 350 for 50-60minutes - should be golden and bubbly. Add vanilla ice cream and it is the best.
Recommendations on fruit/cake mix combos:
apples or peaches/butter pecan cake mix
berries/ french vanilla or lemon cake mix.

it's not so much dessert, but hey, they are good, fast, and it makes about 2 dozen.
1 box cake mix, any kind
2 eggs
1/4 cup oil
blend, place on cookie sheet, and put in oven (preheated 350*) Bake about 8 min, depending on how hot your oven gets........Watch them very good, they cook fast.

I love lemon bars. A good variation is to use lime juice, but make sure you use key limes (the small ones) and not persian limes (the regular ones) so you get enough limey flavor.
