my mom said stores & restaurants dip all produce they get into this dissolved into liquid granule stuff called stay fresh. What's it made out of and why does whatever it is keep the produce so fresh? Can it possibly harm anything? Thanks so much

That's actually a fairly *uncommon* practice as the stuff is in relative terms costly. It's called "Sta-Fresh" and it's a mix primarily consisting of fructose and ascorbic acid. It's just a fancy plant food; very similar to the packets the florist gives you with cut flowers.

If they do have something like that, it's probably similar to fruit fresh. That's granular vitamin c that keeps fruit from turning brown.

I think they probably just soak the veggies in cold water. That keeps cut lettuce fresh for a day or two.

all the restauraunts ive worked in have made all there dips by scratch!
ive never heard of a packet dip.
Plus fresh ones would last a few days longer than a packet one because the packet ones would be made of of pretty much all water (if they do exist that is)

I've read different things... Ascorbic Acid (Vitamin C), but also Calcium Ascorbate .
